Slimming World Beef Lasagne With Courgette
Delicious rich beef lasagne with courgette aubergine pasta sheets for a low carb diet. Includes easy slicing tips and a quick bechamel white sauce that's keto friendly, with step to step images.
Now that I'm focusing on a low carb, keto diet, I've been making lasagne a little bit differently. Particularly since buying a vegetable sheet cutter attachment for my Kitchen Aid.
And ever since, I've loved this courgette aubergine pasta alternative. But, I do use real pasta sheets for my husband in a traditional lasagne using this recipe.
I simply make everything the same, but split the recipe into 2 small baking dishes and layer his with pasta sheets and mine as a courgette lasagne. So, I'm going to finally share my recipe, but assuming you're making 1 large lasagne for 4-6 people.

Kitchenaid Vegetable Sheet Cutter Lasagne
Note, I highly recommend a Kitchenaid vegetable sheet cutter for the courgette (zucchini), or use a knife as I did for slices.
With vegetable sheets, you can get a long continuous sheet to trim down with a knife or scissors. Note, I haven't tried it with aubergine (eggplant) yet , though.
How to Make Aubergine & Courgette Pasta Lasagne

Steps for Making Courgette and Aubergine Lasagne
- Preheat your oven on 160c fan/180c conventional/gas mark 4/350F.
- Saute the onion and garlic in olive oil until softened.
- Add the beef and seasoning (s&p), then brown.
- Then add the remaining meat mixture ingredients,except the parmesan, simmer and stir for 5 minutes and set aside.
- To make the keto bechamel sauce, in a bowl or jug, mix together all of the ingredients until combined.
Layering Your Keto Lasagne
- In a large baking dish (30x23cm), spread a 3rd of the meat mixture at the bottom.
- Add one layer of courgette or aubergine slices on top.
- Top with a 3rd of the white sauce and spread, followed with another layer of either vegetable.
- Repeat with a final layer, finishing with the cheese sauce and grated parmesan.
- Bake in the oven for 35-40 minutes and serve between 6 people.
Swaps for a Vegetarian Lasagne With Aubergine Courgette
For a vegetarian courgette aubergine lasagne, there's two key elements you can change:
- Make sure you use a vegetarian parmesan, such as Violife Prosociano, that doesn't use rennet.
- Swap beef mince for vegetarian mince to make a Quorn lasagne without pasta, or dry soy mince. Or you can make purely a vegetable lasagne by adding squash, or other vegetables
And of course, if you want to make a no pasta lasagne with just courgette, then just replace it with two more courgettes, which will result in even lower carbs!
Low Carb Bechamel Sauce Alternatives
I'm going to be honest here and say, while making this courgette aubergine recipe, I used whatever cream that was in my fridge. I do this with every low carb white sauce, because it's so versatile.
On this occasion, I used double cream, which is higher in calories, but perfectly Keto.
However, here's a list of other ways you can make it:
- 250g tub of quark, mixed with 2 eggs and cheese. Note, this is low fat and perfect as a Slimming lasagne
- A 200-300g tub of natural yogurt, mixed with 2 eggs
- Follow this recipe, but make an oat flour white sauce lasagane without egg s
- 250g tub of full fat creme fraiche or greek yogurt
- Or ricotta cheese
With any type you use, I recommend adding some cheese or parmesan to enhance the flavour.
Slicing Tips For Aubergine and Courgette Pasta Bake
When slicing aubergines and courgettes, I have a few tips after you've trimmed the end off.
- Flatten one of the sides of the aubergines so it stays still while slicing on the chopping board
- To aim for ½cm thick slices, lay your carving knife flat on the chopping board and use the handle's thickness as a depth gauge. To do this, keep the handle flat to the board while you're slicing.

Beef Lasagne With Courgette Aubergine Pasta Sheets - Keto

- 1 tbsp olive oil
- 2 cloves garlic minced
- 1 red onion diced
- Dash salt
- Dash black pepper
- 500 g Extra lean beef mince (5% fat)
- 400 g Tin of chopped tomatoes
- 2 tbsp tomato puree Or red pesto
- 2 tsp oregano
- 1 tsp balsamic vinegar
- 100 g mushrooms sliced
- 40 g parmesan
Quick White Lasagne Sauce
- 284 ml carton of double cream
- ½ tsp xantham gum
- 100 g mature cheddar grated
- ¼ tsp ground nutmeg
- Dash salt
- Dash Black pepper
Pasta-Free Sheets
- 2 courgettes sliced lengthways into ½cm slices
- 1 aubergine sliced lengthways into ½cm slices
